Atole de Maíz

Ingredients:

  • 2 cups masa harina
  • 4 cups water
  • 1 cinnamon stick
  • 1/4 cup piloncillo
  • 1 tsp vanilla

Instructions:

Whisk the masa harina with water until smooth and free of lumps. Simmer gently with cinnamon, stirring constantly. Add piloncillo and cook until thick and creamy. Remove cinnamon, stir in vanilla, and serve warm.

Frijol Colado

Ingredients:

  • 2 cups black beans
  • 1 tbsp lard
  • 1/4 onion
  • Salt to taste

Instructions:

Sauté onion in lard until soft. Add beans with a splash of liquid and simmer briefly. Blend until smooth, return to the pan, and cook slowly until velvety.

Hand-Pressed Corn Tortillas

Ingredients:

  • 2 cups masa harina
  • 1 1/2 cups warm water
  • Salt

Instructions:

Mix masa harina with salt and warm water until a soft dough forms. Divide and press into thin rounds. Cook on a hot comal until lightly charred and keep wrapped.

Papadzules

Ingredients:

  • 12 tortillas
  • 4 boiled eggs
  • 1 cup pumpkin seed sauce
  • Tomato sauce

Instructions:

Warm tortillas, dip into pumpkin seed sauce, fill with chopped egg, roll gently, and top with additional sauce and tomato sauce.

Poc Chuc

Ingredients:

  • 2 lbs pork
  • Citrus juice
  • Oregano
  • Salt

Instructions:

Marinate pork in citrus juice, oregano, and salt. Grill until charred and cooked through. Rest briefly before slicing.

Pozol

Ingredients:

  • 1 cup corn dough
  • 3 cups water
  • Cacao
  • Salt

Instructions:

Dissolve corn dough into water until smooth. Stir in cacao and salt. Chill and stir before serving.

Cochinita Pibil

Ingredients:

  • 3 lbs pork
  • Achiote paste
  • Citrus juice
  • Banana leaves

Instructions:

Blend achiote paste with citrus juice, coat pork, marinate, wrap in banana leaves, and roast slowly until tender.

Tamales de Maíz

Ingredients:

  • 3 cups masa
  • 1 cup lard
  • 2 cups broth
  • Corn husks

Instructions:

Whip lard, combine with masa and broth, spread onto husks, fold, and steam until fully cooked.

Sopa de Lima

Ingredients:

  • Chicken
  • 8 cups broth
  • Limes
  • Tortilla strips

Instructions:

Simmer chicken in broth until tender, shred, return to pot, add lime juice, and serve with tortilla strips.

Flan de Caramelo

Ingredients:

  • 4 eggs
  • Condensed milk
  • Milk
  • Sugar

Instructions:

Caramelize sugar, pour into dish, add blended custard, bake in water bath until set, cool and invert.

Panuchos

Ingredients:

  • Corn tortillas
  • Refried beans
  • Turkey
  • Vegetables

Instructions:

Split tortillas, fill with beans, lightly fry, and top with turkey and fresh vegetables.

Xnipec Salsa

Ingredients:

  • Tomatoes
  • Red onion
  • Habanero
  • Lime
  • Salt

Instructions:

Combine tomatoes, onion, habanero, lime juice, and salt. Rest briefly before serving.
